19 New and Coming Soon Restaurants, Cafes and Bars in Vancouver WA

There is a lot happening in the Couve right now, and I mean a lot. New dumplings, Hawaiian plate lunches, cocktails, coffee, bingsu, noodles, barbecue and even a cat café are either already here or getting very close.

If you have been searching for recently opened restaurants in Vancouver WA or trying to keep track of upcoming places in Vancouver WA, this is the update to save. I pulled together 19 openings from across Vancouver and Clark County, checked where each one stands and separated the places serving now from the ones we still need to watch.

Why 19? ETC 19 is our monthly save&share list, and the number is personal to us: Maria and I were both born on the 19th. Every edition is our way of narrowing a very busy local scene into 19 places worth knowing about right now.

This month’s list includes upcoming restaurants still working toward opening day, along with new cafes, cocktail spots and must try places in Vancouver WA that have already switched on the lights. This is not a ranking, and it is definitely not a list of 19 places I am pretending to have tried. Think of it as the local opening report I would send to a friend who keeps asking, “Wait, when did that place open?”

One quick note before we get into it: opening timelines can move because of inspections, permits, construction and all the other things that happen behind the scenes. The statuses below are accurate as of July 18, 2026.

Now Open

1. Loyal Legion

Status: Opened in May 2026

Concept: A Washington focused beer hall with a full food menu and a large downtown patio

Loyal Legion has brought its big beer-hall energy to downtown Vancouver. The space is large, the patio is built for sunny afternoons and the tap list puts Washington beer front and center. Food leans into the kind of things that make sense with a pint, burgers, sausages, pretzels and salads, so this works for a quick drink, a full meal or a group that cannot agree on one brewery. It is a Portland-born concept rather than a brand-new Vancouver original, but the arrival still feels significant for this corner of downtown.

2. Xin Ding Dumpling House

Status: Opened May 22, 2026

Concept: Handmade dumplings, soup dumplings, noodles and an expanded Chinese menu

Vancouver no longer has to cross the river for Xin Ding’s dumplings. The new location near Vancouver Mall took over the former Shari’s space, giving it plenty of room for the full sit-down experience. The obvious move is to gather a table and order several things to share: soup dumplings, pan-fried dumplings, noodles and a few dishes from the broader Chinese menu. This is another Portland expansion, but it fills a real local craving. If your ideal dinner involves baskets arriving at the table faster than your group can decide who gets the last dumpling, put this one on the list.

3. L&L Hawaiian Barbecue

Status: Opened May 18, 2026

Concept: Hawaiian style plate lunches with rice, macaroni salad and plenty of comfort food

L&L Hawaiian Barbecue is now serving in the Centerpointe area, and this is the stop for anyone who believes a proper plate lunch should be generous. Expect the familiar combination of rice, macaroni salad and choices such as chicken katsu, kalua pork, loco moco, barbecue meats and Spam musubi. L&L is the recognizable franchise on this month’s list, but the Vancouver restaurant is locally operated by owners Lyle Erickson and Monica Baker. It is casual, filling and built for the nights when a tiny, precious dinner is simply not what you want.

4. Wanpo Tea Shop

Status: Opened in late May 2026

Concept: A Taiwanese tea shop known for handcrafted tea, milk tea, fruit tea and boba

Wanpo Tea Shop has opened at Ridgefield’s Costco development, bringing a Taiwan-born tea brand to north Clark County. Wanpo began in Taichung in 1992, and tea, not just toppings, is the center of the menu. You will find brewed black teas, milk teas, fruit teas and boba drinks with plenty of ways to customize sweetness and ice. Ridgefield has been adding food and drink options quickly, and Wanpo gives the area a dedicated tea stop instead of one more general grab&go counter. It is polished and established, but still new enough locally to feel like a discovery.

5. Lil Pig Lil Pig

Status: Opened in early June 2026

Concept: A neighborhood smokehouse and rotisserie from the Thirsty Sasquatch team

Lil Pig Lil Pig has moved into Uptown Village with smoked pork, rotisserie chicken, comfort-food sides and a tap list that makes it easy to stay awhile. The team behind Thirsty Sasquatch knows how to build a neighborhood hangout, and this new concept feels designed for exactly that role. The mood is unfussy, the meats do the heavy lifting and the name is impossible to forget. This is the kind of opening that can quietly become part of the weekly rotation: dinner when nobody wants to cook, a casual meet-up or a plate of smoky comfort food with a local beer.

6. Courtney’s Coffee House

Status: Opened June 5, 2026

Concept: A community-minded downtown coffeehouse in the former Java House space

Courtney’s Coffee House has taken over one of downtown Vancouver’s most recognizable coffee locations, the longtime Java House space on Evergreen Boulevard. That history gives the opening a little extra weight. The goal is bigger than serving coffee and pastries; Courtney’s is building a neighborhood gathering place with games, trivia, open mics and live music in the mix. There is coffee, nitro and something sweet for the quick stop, but the more interesting part is the invitation to settle in. Downtown needs independent spaces where people can meet without turning every visit into an event, and Courtney’s is stepping into that lane.

7. The Savvy Sipper

Status: Opened in June 2026

Concept: A vintage-inspired cocktail lounge with small plates, grazing boards and live music

The Savvy Sipper has opened in Battle Ground Village, taking over the former Emanar Cellars space and giving north Clark County a polished new place for a night out. The room has a vintage mood, the cocktails are the main event and the food side includes small plates, sandwiches, desserts and grazing-style options. Live music adds another reason to linger. Battle Ground has plenty of casual choices, but a dedicated cocktail lounge changes the shape of an evening, you can dress up a little, meet friends and make a full night of it without driving into downtown Vancouver or Portland.

8. Bunny Bingsu

Status: Open at Vancouver Station Food Carts

Concept: Korean milk shaved ice, taiyaki, croffles and classic snow cones

Bunny Bingsu may be one of the sweetest additions to this entire list. The woman- and Asian-owned cart at Vancouver Station specializes in bingsu, the Korean dessert made with finely shaved milk ice and layered with toppings. It is soft, snowy and completely different from the crunchy shaved ice many of us grew up with. The menu also includes taiyaki, croffles and classic snow cones, which means a group can approach dessert from several directions. On a hot Vancouver afternoon, this is exactly the kind of place people start sending to one another with a very simple message: we need to go.

9. Lotic Fermentation

Status: Now open in Hazel Dell

Concept: Small-batch beer, house-made beverages, food and a family-friendly hangout space

Lotic Fermentation, also presented as Lotic Beverage Company, is doing more than opening another taproom. The Hazel Dell space has 30 taps and a broad beverage approach that can include beer, house soda, kegged cocktails, seltzer, cold brew and wine. The food menu brings sandwiches, salads and kid-friendly choices, while games and dedicated space for younger visitors make the room easier for families to use. That flexibility is the point. One person can have a beer, another can skip alcohol completely and everyone can still share the same table without the experience feeling like a compromise

10. Cheeky Noodles

Status: Now open in Ridgefield

Concept: A playful restaurant built around loaded macaroni and cheese

Cheeky Noodles has officially opened in Ridgefield, and it is leaning into a very specific promise: mac and cheese can be the whole reason for dinner. The menu takes the familiar comfort-food base and gives it grown-up, loaded and sometimes unexpected twists. That focused idea makes the place easy to understand and hard to scroll past. It is casual enough for families, fun enough for a friend meet-up and probably dangerous for anyone who says they are “just going to have a bite.” Ridgefield’s restaurant map keeps getting more interesting, and this is one of its most playful new additions.

11. Pho Hung Vancouver

Status: Opened July 2, 2026

Concept: Traditional Vietnamese pho plus specialty bowls, rice plates, vermicelli and bánh mì

Pho Hung has arrived in east Vancouver, bringing a name many Portland-area diners already know. Pho is naturally the center of attention, from the traditional bowls to richer specialty versions, but the menu extends into rice plates, vermicelli and Vietnamese sandwiches. This is the kind of opening that works in every season: bright herbs and noodles when you want something fresh, and a steaming bowl of broth when the gray weather returns. Its Chkalov Drive location is also about to get even more interesting, because another place on this list is opening in the same shopping center.

Opening in the Next Few Days

12. Simply Beautiful Cakes, Bakery & Coffee

Status: Scheduled to open Wednesday, July 22, 2026

Concept: A cake business growing into a full bakery and coffee shop

Simply Beautiful Cakes is preparing to open its new bakery and coffee shop in the former Lakomka European Deli space on Chkalov Drive. Owner Oksana Karpenko is expanding an established custom-cake business into a place where people can walk in for pastries, cake and coffee. That shift is exciting because it turns beautiful celebration work into an everyday stop, not only somewhere you call when you need a wedding or birthday cake. According to the business’s latest opening announcement, Wednesday, July 22 is the day. As always with a brand-new launch, checking the latest update before making a special trip is smart.

13. Milky & Coco’s Kit-Tea Cafe

Status: Scheduled to open Friday, July 24, 2026

Concept: Vancouver’s first cat café, combining drinks, snacks, games and adoptable cats

Milky & Coco’s Kit-Tea Café is almost here, and this may be the opening people talk about most. The concept combines a café serving local coffee, tea and snacks with a separate space where guests can spend time with adoptable cats. The founders are also building community programming into the idea, including support for autistic visitors and seniors, plus tabletop and video games. It is cute, yes, but there is a real purpose beneath the cat-themed fun: connection, calmer social time and more chances for animals to find homes. The announced opening date is Friday, July 24.

Coming Soon and in the Pipeline

The next six are the watch list. Some of these upcoming restaurants are visibly close, while others are still working through construction, permits or an evolving launch plan. That is exactly why a roundup of upcoming places in Vancouver WA needs honest status labels: “coming soon” can mean next month, and it can also mean we should keep watching.

14. The Proof Bar

Status: Targeting August or early September 2026

Concept: A downtown cocktail lounge and restaurant with more than 2,000 whiskeys and spirits

The Proof Bar is gearing up for one of downtown Vancouver’s most anticipated launches. It is moving into the former Sedgwick space at Washington and Eighth, with a two-sided cocktail bar, a full restaurant and a spirits collection expected to exceed 2,000 bottles. That means rare whiskeys for serious collectors, but the owners are also talking about approachable pours and hospitality that does not make newcomers feel tested. The food plan is a curated chef menu with steaks, pork chop, chicken, burgers, elevated bar bites, boards, salads and desserts. The current target is mid-August to early September, depending on the final opening work.

15. Niyom Thai Kitchen

Status: In development in Ridgefield; no confirmed opening date

Concept: A new Thai restaurant planned for the Legacy Trails retail development

Niyom Thai Kitchen is one of the genuinely early-stage entries in this ETC 19. A permit and on-site signage confirm the restaurant planned for South Royle Road in Ridgefield, but a full menu and firm opening date have not been made public. Local development coverage has pointed toward a summer arrival, although I would treat that as a working timeline until the restaurant announces otherwise. For now, this is one to watch, not one to build tonight’s dinner plans around. Still, a new dedicated Thai kitchen would be a welcome addition to Ridgefield’s quickly growing food scene.

16. Couve Carts

Status: In development; targeting November 2026

Concept: An eight-cart downtown food pod with an indoor taproom and gathering space

Couve Carts could become one of the biggest changes to downtown dining this year. Planned near Evergreen Boulevard and Daniels Street, the project calls for eight food carts, an indoor taproom, covered communal seating, fire pits and play areas for children and dogs. In other words, it is being designed as a destination rather than a row of carts beside a parking lot. The developers are currently aiming for November, although a project with demolition, construction and permitting can always shift. If it lands as planned, this could give downtown an all-weather food-cart gathering place with enough variety for groups and families.

17. Fika Coffee

Status: Coming soon to Ridgefield; no firm opening date announced

Concept: A family-owned coffee shop inspired by the Swedish ritual of pausing for coffee and connection

Fika Coffee is still working toward opening in Ridgefield’s Hillhurst development. The name comes from the Swedish practice of slowing down for coffee, something sweet and actual conversation, and the family behind the shop wants that feeling to shape the room. Plans include locally roasted Longbottom coffee, pastries, baked goods and breakfast and lunch choices such as toast and soup. An earlier hoped-for opening window has passed, so I am not attaching a new date until the business does. The concept, however, remains one of the warmest on this list: less rush, more time at the table.

18. Family Coffee & Bakery

Status: Opening 07/19

Concept: An independent neighborhood coffee shop and bakery

Family Coffee & Bakery is getting close in Hazel Dell Town Center. Recent progress updates show a space that appears nearly ready, but the business has not published a firm opening date, and detailed menu information is still limited. What we do know is refreshingly straightforward: coffee, baked goods and a neighborhood-focused setting. Sometimes that is enough to make a place worth watching. Hazel Dell has busy roads and plenty of quick-service options, so an independent bakery where people can slow down over coffee could fill a very useful everyday role. Keep this one bookmarked until the doors officially open.

19. Silk Nife

Status: Coming soon to Felida; opening date not yet announced

Concept: A polished new bistro from the family run Pearl West Restaurant Group

Silk Nife is taking over the former Los Potrillos location in Felida, and it is easily the most mysterious entry this month. The project comes from Pearl West Restaurant Group, the local family-run team behind Margarita Factory, DOSALAS and DIOSA. Staff have indicated that Silk Nife will not be another Mexican restaurant; early information points instead to a polished bistro concept with the dramatic design sensibility people associate with the group’s other spaces. The full menu and launch timeline are still under wraps. For now, the combination of experienced operators, a sizable neighborhood location and a completely new name makes this a serious one to watch.

This is what I love about tracking local openings: no two months look the same. One week we are talking about handmade dumplings and Hawaiian plate lunches; the next, it is a cat cafe, a 2,000bottle cocktail bar and a full downtown food-cart pod.

Several of these places are already serving, a couple are only days away and the rest are still making their way through the less glamorous work that happens before opening day. I will keep watching the timelines, especially the ones without a firm date, and update you when those doors actually open.
